Scientists at the University of Wisconsin found that wooden cutting boards, especially those made from olive wood, almost completely absorb and kill germs: Just 3–10 minutes after contamination, typical bacteria like E. coli were no longer detectable in the wood – whereas on plastic, they survived and even multiplied overnight.

If your board does show many cut marks after years, you can easily sand it down and refresh it with a little oil – and it's like new again.
No olive tree is felled for our products. We exclusively use wood from trees that no longer bear fruit, or wood that arises during the maintenance of olive groves. This results in no unnecessary intervention in nature – instead, the wood receives a second life in the form of beautiful, durable kitchen helpers.
