The striking Damascus pattern on the blade of the Carême chef's knife is not only a visual highlight but also an unmistakable sign of genuine craftsmanship.
Unlike inferior imitations, where the pattern is artificially created through acid etching, this is a naturally formed pattern that results from the specific processing of the steel.
The pattern is created by repeatedly folding and forging the 69 different steel layers. During the folding process, the hard and soft steels bond together, creating the wave-like, almost flowing pattern. Additionally, a special tool is used to guide the pattern. This specifically alters the course of the pattern to create an aesthetically particularly appealing and uniform design. The original structure of the layered steels is elegantly redirected and shaped, resulting in the wave-like lines appearing particularly precise and harmonious.
This pattern is naturally unique – no knife is like another.
Both traditional techniques and modern manufacturing processes are used in the production to create a knife that meets the highest standards.
The blade is made of Japanese Damascus steel and is crafted from a total of 69 layers. This construction combines steel of different hardness and flexibility in perfect balance to ensure long-lasting sharpness and exceptional durability.
The special multi-layer construction of the blade combines 34 layers of steel on each side, enclosing the high-strength T-CO steel core. This core guarantees impressive cutting performance, while the softer outer layers make the blade elastic and shatterproof. The result is a blade that retains its sharpness for a long time even with intensive use and, thanks to the stainless steel outer layers, is extremely corrosion-resistant and durable.
Through the hardening process, the blade achieves its extraordinary hardness of 60 HRC. It is then tempered to reduce brittleness and increase flexibility.
In precise handwork, the blade is ground and polished for hours to achieve a particularly sharp and durable edge. The grind angle of about 15 degrees offers the optimal balance between sharpness and durability. Together with the ergonomic handle made of stabilized birch wood and resin, the knife is finally perfectly balanced.
Thanks to the razor-sharp blade, it glides effortlessly through food without crushing it, preserving nutrients and vitamins optimally.
